Feb. 17 Value-Added Products Workshop in St. Peters

Thinking about starting or expanding your small farm or food business? You might consider value-added products as part of your enterprise, says Justin Keay, horticulture specialist for University of Missouri Extension.

Registration is open for , 8:30 a.m.-5 p.m. Saturday, Feb. 17, in St. Peters at the St. Charles County MU Extension Center.

Attendees can learn firsthand from producers about products, regulations, business planning and marketing, Keay said.

The event is organized by and the Small farmers and small-scale food producers have the potential to increase revenue by processing raw fruit and vegetables into ready-to-eat, ready-to-cook, frozen and shelf-stable products, Keay said.

Success in value-added production requires an understanding of food code regulations, marketing strategies, a product's value proposition to the customer, business planning, evaluating cost of production and learning from others already actively producing value-added products, he said.
